The power drops, the house goes quiet, and suddenly every time someone reaches for the fridge feels like a high-stakes move. For most households, a blackout is not just an inconvenience. It can put a full weekly shop at risk, interrupt medication storage, and turn a family meal plan into a food-safety decision. With a few calm moves - and the right backup setup for longer outages - you can protect what matters and avoid throwing out food unnecessarily.

How to keep food cold in a blackout: the first four hours

Keep the refrigerator and freezer doors shut. An unopened fridge generally holds a safe cold temperature for around four hours. A full, unopened freezer can usually hold its temperature for about 48 hours, while a half-full freezer may last about 24 hours. Those windows assume the appliance was cold before the outage and the doors stay closed.

That means the first hour is not the time to stand in front of the fridge deciding what to eat. Grab what you need once, close the door properly, and let the appliance do its job. If you have children at home, make the rule clear early: no fridge browsing until the power is back.

If the outage is likely to last, use a fridge thermometer if you have one. Perishable food is safest when kept at 4°C or below. Once foods such as meat, poultry, seafood, dairy, cooked leftovers and prepared salads spend too long above that temperature, bacteria can multiply quickly. Smell and appearance are not reliable safety tests.

A simple time check also helps. Write down when the power went out, especially if you are busy dealing with torches, mobiles, pets or a flooded driveway. During a widespread outage, memory gets fuzzy fast.

Make the freezer work harder for you

A well-packed freezer holds cold better because frozen food acts like thermal mass. If there is spare room before storm season, fill sealed containers with water and freeze them. They help stabilise the temperature during an outage, then become drinking water as they thaw.

Keep meat and seafood together on a tray or in a tub where possible. If anything leaks as it thaws, it will not contaminate other food. Store the most expensive and most perishable items towards the middle or back of the freezer, away from the door.

If food still contains ice crystals after the power returns, or has remained at fridge temperature or colder, it can often be refrozen or cooked. Quality may drop, but safety is the key question. If you are unsure how warm an item became or how long it sat warm, bin it. Losing a few groceries is better than losing a weekend to food poisoning.

Move food only when it gives you more cold time

Opening the fridge to transfer everything into a cooler can make sense, but not immediately. A good esky packed with ice or frozen gel packs can protect priority food during an extended outage. A poor cooler, opened constantly in a warm kitchen, may be worse than leaving food in a shut fridge.

Choose your priority items first: medication that requires refrigeration, infant food, meat, seafood, milk, yoghurt and leftovers. Pack them tightly with ice packs around the sides and on top, then keep the cooler in the coolest shaded spot available. Put a thermometer inside if possible.

Avoid using outdoor temperatures as your main refrigeration plan. A cold night in New Zealand can help, but sun, wind shifts, curious animals and fluctuating temperatures make a deck or garage unreliable. Food needs consistently cold conditions, not a few chilly hours.

Use ice strategically, not randomly

If you can safely buy ice before roads or shops become difficult, buy block ice or large frozen bottles rather than relying only on loose cubes. Large blocks melt more slowly. Keep the ice contained where possible, because melting water can soak packaging and make your food harder to manage.

For a fridge, place ice in a tray or shallow container to catch water. For a cooler, create layers: ice or frozen bottles at the base, food in sealed containers, then more ice on top. Cold air settles, but heat enters every time the lid comes off, so pack it in a way that lets you find items quickly.

Do not try to save everything. Use the fridge’s limited cold time for foods that genuinely need it, then eat shelf-stable food first. Tinned meals, crackers, long-life milk, peanut butter and fruit can carry dinner while the fridge stays closed.

Portable power can keep your fridge running

When outages stretch beyond a few hours, a portable power station can shift the situation completely. Instead of managing thawing food, you can keep a compatible fridge or freezer cycling as normal. This is where backup power becomes more than a convenience - it protects your food, reduces waste and keeps your household moving when the grid does not.

The important word is compatible. Fridges do not draw the same amount of power every second. Their compressor cycles on and off, and it can need a higher burst of power when starting. Check both the appliance’s running wattage and its startup demand, then choose a power station with enough continuous output and surge capacity.

Battery capacity matters too. It is measured in watt-hours. A larger battery can run a fridge for longer, but the exact runtime depends on the fridge’s size, age, insulation, room temperature and how often the door opens. A small efficient fridge in a cool room may sip power; an older fridge in a hot garage can drain a battery far faster than expected.

Before blackout season, test your own setup. Run the fridge from the power station for several hours under normal conditions and note the battery percentage used. It is the most practical way to understand your real-world requirements. You can then decide whether you need a larger unit, an extra battery, or solar panels to extend the run time in a long outage.

Solar changes the equation during daytime outages. It can recharge a portable power station while the station supports your essentials, provided conditions and equipment are suitable. It will not always cover every watt your household uses, particularly in heavy cloud or winter, but it gives you a renewable top-up rather than relying solely on stored battery energy.

Keep the power station dry, well ventilated and away from direct heat. Run the fridge from an appropriate cable in good condition, and avoid overloading the unit with non-essential appliances. The kettle, toaster and electric heater can consume a huge share of your stored energy. During a blackout, the fridge, communications, lights and medical essentials are usually the smarter priorities.

Never run a petrol generator indoors, in a garage or near open windows. Carbon monoxide is deadly and has no smell. Portable battery power is a cleaner option for indoor use when operated according to its instructions, but it still needs sensible placement and cable management.

Know when food has become unsafe

The hard call comes after a long outage. Start with temperature and time, not optimism. Refrigerated perishable food that has been above 4°C for more than two hours should generally be discarded. For frozen food, check whether it is still solidly frozen, has ice crystals, or has fully thawed and warmed.

Be especially cautious with raw meat, cooked rice, leftovers, soft cheeses, cream-based foods, deli meats and seafood. Do not taste food to test it. When in doubt, throw it out.

Take a quick photo of spoiled food before disposing of it if your contents insurance may cover blackout-related losses. Then clean and dry the fridge or freezer once power is restored, particularly if meat juices or melting ice have leaked.

Build your blackout food plan before the next outage

The best blackout response begins before the weather turns. Keep a fridge thermometer, a freezer thermometer, a quality cooler, ice packs and a torch in predictable places. Freeze a few water bottles, keep shelf-stable meals on hand, and know which foods your household will protect first.
